Baked Buffalo Drumsticks

Meal Notes: I’ve tried at least half a dozen baked buffalo chicken recipes over the years, all with soggy, disappointing results- until now! These are the real deal: crispy and tangy, with just a hint of sweetness and way fewer calories than you’d get from ordering the fried version at a bar. Serve with your favorite potato recipe and a side of slaw.

Ingredients
3 pounds drumsticks or wings
1 Tablespoon baking powder (the secret ingredients to keep your chicken crispy!)
1 teaspoon salt
1/2 teaspoon pepper
1 teaspoon onion powder
1 teaspoon garlic powder
1/2 cup Frank’s Red Hot Sauce*
4 Tablespoons butter, melted
Ranch or blue cheese dressing for serving (optional)
Instructions
Preheat the oven: 400 degrees F
Prep the baking sheet: line a baking sheet with aluminum foil and place a rack over the top of it.
Prep drumsticks: Place the drumsticks in a bowl. Add the baking powder, salt, pepper, garlic powder, and onion powder. Toss to coat the drumsticks evenly in the mixture.
Bake drumsticks: Bake the drumsticks for 45 minutes or until they are golden brown and crispy.
Make sauce: While the chicken bakes, combine the melted butter, buffalo sauce, and honey in a bowl.
Finish drumsticks: Using tongs, dip the baked drumsticks in the sauce, thoroughly coating each one. Serve any remaining sauce on the side.
*Do I really have to buy this specific brand? You don’t have to do anything, but, in my experience trying a few different brands, Frank’s will give you by far the best results.
