Emma's Arugula Salad with Marinated Tomatoes
Prep Time: 45 minutes (10 minutes hands-on time)
Meal Notes: This simple, but incredibly tasty salad makes a meal out of any main dish (ex: Rice Soup with Chicken or Pan Broiled Steaks.). It’s become a dinnertime staple in my home, but it also travels well pre-assembled for potlucks (as pictured).

Ingredients
- 1 pint cherry tomatoes 
- 1 red onion 
- 1/4 teaspoon salt 
- 1/4 teaspoon pepper 
- 1/2 teaspoon sugar 
- 1 Tablespoon lemon juice 
- 1 Tablespoon red wine vinegar 
- 4 Tablespoons olive oil 
- 6 ounces arugula 
- 8 ounces baby bella mushrooms 
- 1 ounce Parmesan cheese 
Directions
- Prep: Cut cherry tomatoes in half. Shred Parmesan. Slice mushrooms. Quarter onion and slice thinly. 
- Marinate Tomatoes: Combine tomatoes and onion slices in a medium bowl with 1/4 teaspoon salt and 1/4 teaspoon pepper. Add the sugar, lemon juice, vinegar, and 1 Tablespoon of the olive oil. Marinate at room temperature for at least 30 minutes, up to 3 hours. When tomatoes are finished marinating, drain juice and add 3 Tablespoons olive oil. 
- Make Salad: Place the arugula in a salad bowl and season lightly with salt and pepper. Add mushrooms and cherry tomato mixture. Toss to combine. Top with Parmesan.
