Whipped Parmesan Cauliflower
Prep Time: 30 minutes (about 10 minutes hands-on)
Meal Notes: This lighter alternative to mashed potatoes is delicious, healthy, and easy. The cheesy, buttery vegetable puree goes nicely with almost any protein, but I especially recommend trying it with agrodulce pork chops, chicken with herb roasted tomatoes, or pan broiled steak.

Ingredients
1 medium head of cauliflower
3 garlic cloves
1/4 cup milk
1/3 cup grated Parmesan cheese
1 Tablespoon butter
1/2 teaspoon salt
1/2 teaspoon ground black pepper
1/4 cup grated Harvarti cheese
Instructions
Prep Ingredients: Cut cauliflower into florsets. Peel garlic. Grate Parmesan and Harvarti cheese separately and set aside.
Boil Cauliflower: Bring a large pot of water to a boil. Add the cauliflower and garlic. Boil about 15-20 minutes, until cauliflower is soft. Drain in a collander and return cauliflower to pot.
Mash Cauliflower: Add the milk, Parmesan, butter, salt, and pepper to cauliflower. Puree with an immersion blender until smooth (or remove to a regular blender and puree in batches). Stir in the Harvarti until it has melted and serve hot.
