Chicken with Lemon and Garlic

Ingredients
8 oz boneless, skinless chicken breast
2 Tablespoons olive oil
1 shallot
4 garlic cloves
1 teaspoon paprika
Juice of 1 lemon (about 1/4 cup)
About 1/4 cup fresh parsley (or 2 teaspoons dried)
Salt and pepper
Directions
Prep: Trim chicken and cut breasts in half, first crosswise and then lengthwise. Sandwich breasts between two sheets of saran wrap and bat with a rolling pin until they are about 1/4 inch thick. Then cut the chicken into strips about 1/2 inch wide. Dice the shallot, mince the garlic, and chop the parsley.
Cook chicken: Heat oil in a skillet. Add the chicken strips and stir fry with the shallot, garlic, and paprika over high heat for about 3 minutes, until lightly browned and cooked through.
Finish: Turn down the heat. Add the lemon juice, parsley, salt, and pepper. Sprinkle with parsley. Stir to combine before removing from heat and serving.
