Creamy Scrambled Eggs with Goat Cheese & Charred Tomatoes

Meal Notes: Confession - I didn’t really get the appeal of eggs for dinner until I found this recipe. But now - oh, how I get it. I’d happily eat these scrambled eggs morning, noon, and night. Although I love the addition of charred cherry tomatoes, the real secret to this recipe is in the prep technique. Pair it with bacon, an English muffin, and/or breakfast potatoes and you’ve got a winning, easy meal any time of day.

Ingredients

  • For the Eggs

    • 6 eggs (will serve two people; double or halve the recipe accordingly)

    • 1/4 cup heavy cream

    • 1 teaspoon salt

    • 1/4 teaspoon black pepper

    • 3 Tablespoons olive oil

    • 3 Tablespoons butter

    • 2 Tablespoons goat cheese (optional - or substitute whatever cheese you like!)

  • For the Tomatoes

    • 2 Tablespoons olive oil

    • 1 1/2 cups cheery tomatoes

    • 1/2 teaspoon kosher salt

    • 1/4 teaspoon black pepper

Directions

  • Prep the Ingredients: Place eggs, cream, salt and pepper in a medium-sized bowl and whisk together.

  • Scramble the eggs: Heat the olive oil and butter together in a skillet over low heat. Keeping the setting on low through-out the entire scrambling process is key. When the butter and olive oil are melted together, add the egg mixture. Stir the egg mixure, scraping up the cooked curds and mixing and mixing and mixing until the eggs form into a light and creamy scrambled consistency. This will take at least 10 minutes.

  • Char the tomatoes: Without abandoning your egg-stirring, heat a second skillet (ideally, a cast-iron or other heavy-bottomed one) on the burner next to the eggs. When the second skillet is hot, add the oil and give it a swirl. Add the tomatoes, sprinkling them with salt and pepper. Leave the tomatoes to char for a couple of minutes on one side, then toss them, then repeat until they’re blistered and beginning to burst. Turn off the heat.

  • Finish and serve: In the last minute of scrambling the eggs, add and fold in the goat cheese. Serve the eggs topped with the charred tomatoes. Sprinkle with thinly sliced chives, if desired.
